London in Mayfair, Le Perroquet marks Daniel Rose’s first restaurant in London.
The St Regis London is set to open in October 2026, and excitement is building around the luxury hotel and its new restaurant and bar. Now, Chef Daniel Rose has announced that he will open Le Perroquet inside the hotel.
Led by the American chef, Daniel already boasts an impressive portfolio of restaurants in New York and Paris. He oversees two restaurants in Paris, while his flagship venue is the Michelin-starred Le Coucou in New York. Now, he is bringing his culinary expertise to London for the first time.
Staying true to his roots, Daniel is creating a French all-day brasserie. While the full menu remains under wraps, we do know that guests can expect classic French dishes served throughout the day, as the restaurant is open for breakfast, lunch and dinner. Leading the kitchen day-to-day will be Executive Head Chef Robert Aikens, the twin brother of Tom Aikens.

The restaurant aims to create a warm and welcoming atmosphere. Daniel said: “For me, the brasserie is one of the most complete forms of a restaurant. It’s not about invention – it’s about doing things properly, with attention and care. It should feel alive, and part of the city around it. That’s what we hope to create here.”
The St Regis London will be home to 193 rooms, including 66 suites and two wellness suites. The hotel will also feature a jazz bar and a library.
