Chef Will Devlin has made his mark in London. His recently opened restaurant, Birchwood – The Conduit in Covent Garden, has already impressed FACT. In the autumn, he is set to open Nettle, which will also be located in the hotel.

Taking a different approach to Birchwood, Nettle will celebrate the magic of fire-led cooking, with a bespoke grill taking centre stage. As with the restaurant below, the produce will come straight from Devlin’s own farm, while carefully sourced meat and fish from Kent and Suffolk will showcase seasonal ingredients.

The full menu for Nettle has not yet been revealed. So far, we know that the menu will span small and large plates. Dishes include Kent lamb with house togarashi, grilled whole day boat fish fresh from the coast, wild rabbit skewers with fermented chilli, and wild venison with nasturtium and shiso. Plus, desserts range from pump street chocolate to cep mushrooms.

The rooftop will also have a makeover and will boast views across Covent Garden. As you can never be too sure about the British weather, visitors will be glad to hear that there is both indoor and covered seating.

If you can’t wait for the opening of Nettle, head to Birchwood – The Conduit in Covent Garden. The restaurant opened in June, and it is a gastro café-meets-wine bar. The concept is the big-city sister to Birchwood – Taywell Farm in Kent. And, like its predecessor, it draws on ingredients sourced directly from its own farms as well as other independent local producers.
