The London food scene is set to welcome Saltwater Sushi. The team behind the original Milk Beach have announced a new opening, and this time it’s a handroll bar in Berwick Street, Soho. Opening in summer, here’s what you need to know.

Saltwater Sushi will bring a fresh counter-dining sushi experience to Soho. While the full menu is yet to be revealed, the focus will be on carefully crafted Japanese handrolls. The kitchen will be led by Shaulan Steenson, who has worked at Asa Izakaya and the FACT Award-winning Endo at Rotunda. Executive Chef Tom Cajone, formerly of the Columbo Group, and the team behind Blues Kitchen and The Parakeet, will also be leading the kitchen.

The menu promises an accessible introduction to Japanese cuisine, with options such as avocado and fermented chilli, bluefin tuna, and chicken schnitty with avocado and spicy mayo. Guests can also expect hand-pressed nigiri, including Norwegian salmon with miso glaze and hamachi topped with jalapeño and ponzu. There will be donburi bowls, such as fried aubergine with a maple-and-black-vinegar glaze. Ingredients will be sourced from both near and far, including bluefin tuna from Balfegó in Spain, salmon from Scotland, Norway and the Faroe Islands, and short-grain rice from Hadong in South Korea.

Milk Beach founder Elliot Milne explained: “Too often, sushi is packed into plastic trays and lacks freshness or personality. With Saltwater, we want to bring restaurant-quality sushi into a more accessible format, giving guests the freedom to choose from a wide range of freshly made handrolls, nigiri and hot rice bowls.”
