Forget worrying about whether your martini should be shaken or stirred. At Brutes of Mayfair, the real question is whether you’d like it topped with Monster Munch. While it’s unlikely that James Bond would be seen sipping one of these creations, the concept is already causing a stir. Located on Bruton Place in London, the bar is set to open on Wednesday, 10 June 2026.
The duo behind Brutes of Mayfair have a wealth of experience from across the restaurant and bar world. Founders James Stevenson and Guy Mazuch first met while working for the JKS group, where Stevenson served as Beverage Director. Mazuch has also worked on food and drink programmes for Ambassadors Clubhouse, Kitchen Table and Lyle’s.
Now the pair have created a bar centred on the bites-and-beverages trend – but with a playful twist. Step inside the intimate 12-seat bar and get ready for a lively night out.
At Brutes of Mayfair, the martini menu is refreshingly playful. Guests can choose their base spirit and decide how they’d like it served, with options including dry, wet, dirty and even brutal – the latter might tempt Dr No, rather than Bond. The drink is then finished with a topping, but we’re not talking about a classic olive or twist of lemon. Instead, the options range from pickled-onion Monster Munch to chicken scratchings.
The bar snacks continue the high–low theme. Expect indulgent combinations such as crisps topped with caviar, as well as other unexpected bites. Drinks also include the Seventh Stall with wasabi leaf vodka, yellow tomato, hot sauce and mustard seed caviar. Bartenders will be dressed in smart 1960s-style white jackets. The soundtrack will include a mix of jazz, hip-hop, soul, funk and grime. Plus, there will be DJ-led events and private hire available.
James Stevenson says: “At Brutes, we set out to create a bar with a real sense of place, something rooted in London and the street it lives on. The bartenders take centre stage, creating a communal atmosphere where guests feel part of something unfolding through drinks, music, and service. It’s the kind of bar we’ve always romanticised, a classic experience brought up to date.”
