Dubai has produced its fair share of restaurant success stories, but few have travelled quite as confidently as GAIA. Now, the homegrown hospitality brand is adding another layer to its international offering with the launch of The Bar at GAIA, its first standalone cocktail bar concept worldwide.

Located on the first floor above the FACT award-winning GAIA Mayfair, the new drinking destination extends the restaurant’s familiar blend of Greek-Mediterranean cuisine, generous hospitality and unmistakable glamour into a dedicated bar experience. Open daily from 4pm, it has been designed for everything from pre-dinner drinks and post-meal gatherings to music-led evenings that continue into NYX, GAIA’s late-night lounge.

GAIA first opened in Dubai in 2018, created by Fundamental Hospitality founder Evgeny Kuzin and acclaimed chef and restaurateur Chef Izu Ani. The concept quickly became one of the Gulf’s most desirable dining destinations, attracting celebrities, royalty and Dubai’s sharply dressed dining crowd. Its combination of culinary simplicity and glitzy surroundings helped redefine what a homegrown restaurant brand could achieve.

The accolades followed. GAIA became a four-time winner of Best Greek Restaurant at the FACT Dining Awards Dubai, before receiving further FACT recognition in London. The restaurant has since expanded from Dubai to Monaco, London, Marbella, Doha and Miami, proving that a concept born in the UAE can compete in some of the world’s most demanding dining markets. Abu Dhabi and Riyadh are also set to welcome the brand, continuing its global expansion.

Chef Izu Ani has been instrumental in shaping GAIA’s appeal. Working alongside Chef Orestis Kotefas, he has created a menu inspired by traditional Greek cooking, fresh Mediterranean produce and the emotional connection that comes from sharing food around the table. The cooking avoids unnecessary complication, allowing seafood, vegetables, olive oil and carefully sourced ingredients to take centre stage.

GAIA’s signature Ice Market remains one of the brand’s defining features. Guests can select fresh fish and seafood displayed over ice before choosing how it is prepared. Elsewhere, dishes such as Seabream Carpaccio, Prawn Saganaki, Grilled Octopus, Lobster Pasta and Classic Moussaka have become recognisable signatures across its global locations.

Rooted in the same values of quality, generosity and emotional hospitality, The Bar at GAIA builds upon that social energy, placing cocktails at the centre of the experience while retaining the atmosphere associated with the restaurant below.

Its menu, titled “A Modern Vision on Traditional Craft.”, celebrates the natural character of each ingredient through seasonal produce, measured techniques, delicate textures and restrained presentation. Four popular cocktails have also been retained under a LEGACY section, preserving established favourites while introducing a new generation of drinks.

Music will evolve throughout the evening, allowing the bar to move naturally from early drinks into a more energetic late-night setting. The journey upstairs has also been treated as part of the occasion, revealing a space that feels connected to GAIA while carrying its own identity.
