Zylia is headed up by a team that brings their cultures to the table. Nick, born in Athens, is associated with FACT Dining Award winners: he was the former Head Chef at Kiln and co-owner of Singburi. He has also worked at Agora and Oma. Barry Karacostas, who is of Cypriot heritage, has worked in the hospitality industry for more than 20 years. He recently worked at Arcade, overseeing its growth and operations. Main dishes will include Chicken Souvlaki, Sheftalia with oregano and lemon, and Vazania with grilled aubergine, spiced tomato sauce, and anari cheese.
