Trèsind Mayfair has released a new cookbook ahead of its opening.
Trèsind is heading to London after making its mark in Dubai and Mumbai. Trèsind Mayfair is opening in the capital, and we had a first look (and taste) of the Indian restaurant. In time for the opening, the team have released the book The Rise of Indian Food: Recipes Reimagined by Trèsind Studio and will hold An Evening with Three Michelin-Starred Chef Himanshu Saini at Fortnum & Mason on 10 May 2026.
Since opening in 2014, the Passion F&B group has expanded to include Trèsind Dubai, Trèsind Mumbai, and Trèsind Studio – the latter being its Michelin-starred jewel in the group’s crown, and winner of Restaurant of the Year at the FACT Dining Awards Dubai on four occasions. Now, it has expanded with Trèsind Mayfair.

At An Evening with Three Michelin Star Chef Himanshu, guests can learn about how Chef Himanshu Saini has helped reshape perceptions of Indian food. The discussion celebrates the launch of the book The Rise of Indian Food, written by Himanshu and FACT Contributor Liam Collens.
Liam explains: “Trésind Studio is a distinctly future-forward restaurant informed by convention and the traditions of billions over millennia, yet unconstrained by them. The book not only reflects that spirit but intentionally holds a mirror up to regional Indian cuisines and asks where next? Imagine naan as a “soup fle” (when soup meets a soufflé). Tortellini, gorgonzola, truffles and uni are used fluently without distorting, diluting or pandering to novelty; the restaurant and book show that Indian food is inherently elastic and capacious enough to absorb and evolve without losing identity or integrity.”

Himanshu Saini is one of the most influential Indian chefs working today. Originally from Delhi, his culinary career was shaped by an early stint under Chef Manish Mehrotra at Indian Accent, one of India’s most acclaimed modern Indian restaurants. He was later part of the founding teams behind Masala Library and Farzi Café, two concepts that helped push Indian cuisine into a more contemporary space.
Saini moved to Dubai in 2014, where he became closely associated with Passion F&B and the launch of Trèsind. The restaurant introduced a more progressive style of Indian dining to the city, combining regional flavours, modern technique and tableside theatre. His most significant achievement has been Trèsind Studio, which opened in 2018 and became his flagship stage for modern Indian gastronomy. The restaurant is built around a multi-course tasting menu that reimagines India’s culinary heritage through storytelling, nostalgia and precise technique.
Trèsind Studio earned its first MICHELIN star in 2022, a second in 2023 and a third in 2025, making it the first Indian restaurant in the world to receive three MICHELIN stars.

If you feel intimidated about recreating a Michelin menu at home, there is no need to worry. Liam adds: “With more than 60 recipes, we consciously shortlisted ones that speak to different audiences, from ambitious home cooks to experienced cooks and professional chefs. I’m looking forward to seeing people try the recipes and share their dishes online. Thankfully, most ingredients are now available in shops or online. We substituted much of the specialised equipment with items people are likely to have at home. Inevitably, there are a few tools most everyday readers won’t have, where we needed to remain faithful to what the kitchen proudly serves night after night.”
