It’s time to raise a glass to a new cocktail bar. The team behind Trèsind have opened Tryst in Mayfair, London. Inspired by the diverse flavours of India, the speakeasy-style venue is tucked away beneath Trèsind, and offers an intimate new destination for cocktail lovers.
Tryst celebrates India’s rich regional flavours through an inventive drinks programme. Designed by Marina Juszczyk, formerly Head Bartender at SOMA, the 30-cover bar pairs warm plaster, natural stone and brushed metal finishes with soft lighting to create an inviting, contemporary space. Behind the bar, regional Indian ingredients are reimagined using techniques including fermentation, clarification, milk washing, carbonation and sous-vide infusions, giving familiar flavours a fresh and unexpected twist.
The opening menu, Volume One, takes guests on a journey across India, with every cocktail inspired by a defining regional ingredient or culinary tradition. Expect everything from kokum from the Konkan coast and jasmine from Madurai to Assam tea, Ratnagiri’s celebrated Alphonso mangoes and Bengal’s fragrant Gondhoraj lime.
Signature drinks include Bikaner, which blends kumquat, Johnnie Walker Blue Label, aamchoor, Cognac, Amaro Montenegro, peppercorn and buttermilk; Konkan, a savoury highball combining kokum, Chopin Vodka, chaat masala, apricot, fino sherry and toasted coconut; and Tanjore, a savoury serve featuring Don Julio Blanco, pisco, clarified tomato water, curry leaf, cumin, coriander and hing.
Suyash Nath, CEO of Passion F&B UK and US, said: “As a group, we’ve always been passionate about showcasing the incredible depth and diversity of Indian cuisine through a contemporary lens. With Tryst, we wanted to extend that same philosophy to the world of drinks.
“India’s regional ingredients and flavour profiles offer an extraordinary palette for cocktails, and our ambition has been to treat them with the same creativity, technical precision and respect that define our kitchens. We hope every guest discovers a flavour they didn’t expect, but if I had to recommend just one drink, it would be our take on Tomato Rasam. It’s familiar, savoury, a little unexpected, and perfectly captures what Tryst is all about.”
