From MICHELIN-starred kitchens to global acclaim, Johanne Siy’s latest move to launch Aro is her most personal yet.

As the adage goes, “anything worth doing is worth doing well,” and that rings especially true to the work ethic of acclaimed Chef Johanne Siy. Under her stewardship, Siy’s last stint in Singapore as head chef of Lolla for five years, saw the restaurant making news as one of a handful of restaurants listed on the MICHELIN Guide. Since her departure from the local culinary scene in mid-2025, Siy embarked on an international quest for discovery. These travels were not idle leisure, however, but research on perfecting her vision for her next venture Aro, a restaurant that underscores the expression that her craft is a “labour of love.”

Scheduled to launch this September, Aro will feature a gathering of personal memories from her travels. These are materialised as ceramics by craftsmen from Arita, Japan, fine bone china tableware from Laguna, Philippines, and traditionally prepared Asin Tibuok sea salt from Bohol Island that accompanies her diners’ meals. 

Located at the former premises of the one-Michelin-starred restaurant Esora at 15 Mohammed Sultan Road, the space will reportedly allow for close interactions between guests and chef, where Siy hopes to forge genuine connections through the dining experience.

To further expound on the restaurant’s narrative, Siy is curating dishes that reflect nostalgia from her childhood, living at the beachside town of Pangasinan. Diners can expect a seafood-focused tasting menu that highlights the best unsung products originating from the Asia-Pacific, and how they complement familiar luxury ingredients. 

In the hands of the chef who has honed her craft with tenures at Michelin-starred heavyweights Le Bernardin in New York, Noma in Copenhagen, Restaurant Andre in Singapore, and more, all roads now lead to Siy’s latest bold move to headline the Singapore culinary scene once more.
