After making waves in Los Angeles and Riyadh, Chi Spacca is coming to Singapore. The Italian grill by acclaimed American chef Nancy Silverton is set to open at Hilton Singapore Orchard in late 2026, taking over the space currently occupied by Osteria Mozza.
Rather than launching as a permanent restaurant, Chi Spacca Singapore will operate as a one-year culinary residency. The approach will allow the team to introduce the concept thoughtfully, understand local dining preferences, and gather real-time operational insights before deciding on its future.
The name Chi Spacca, which roughly translates to “he or she who cleaves”, refers to the person wielding the cleaver to butcher large cuts of meat. True to its name, the restaurant is built around wood-fired cooking, house-aged meats and generous dishes designed for sharing.
The existing wood-fired oven and Josper ovens at Hilton Singapore Orchard will be put to use, alongside a new grill. The menu will closely reflect the original Chi Spacca in Los Angeles, featuring its signature steaks, skewers, savoury pies and fire-grilled proteins.

Among the dishes expected in Singapore are the Bistecca Fiorentina and pollo alla diavola, a flattened, boldly seasoned grilled chicken. Meat skewers and other substantial cuts will be served for the table, reinforcing Chi Spacca’s convivial, family-style approach. The restaurant will also bring its hearty savoury pies to Singapore, including lobster pot pie, chicken pot pie and beef bone marrow pie, as well as one of Chi Spacca’s standout signatures, Focaccia di Recco.
With wood-fired meats, house-aged cuts, Italian grilling, savoury pies and molten-cheese-filled focaccia, Chi Spacca Singapore is shaping up to be a very different addition to the Lion City’s Italian dining scene. Whether the one-year residency becomes a permanent fixture remains to be seen. But if its combination of fire, steak, cheese and generous sharing plates is anything to go by, Chi Spacca Singapore could make a strong case for staying in Orchard long-term.
