Journe, a new private dining concept, is preparing to open in Singapore’s Jalan Kayu at the end of June. Created by husband-and-wife chef duo Guah Lih and Ethel Koh, the intimate dining experience will bring a personal, produce-led approach to the city’s evolving restaurant scene.
Located in Fernvale, the concept marks a new chapter for the couple, who both trained at the Culinary Institute of America in Singapore. Their careers have since taken them through Michelin-starred kitchens in California and Singapore, giving them an international outlook that now shapes the vision for Journe.

Rather than being tied to one cuisine, Journe has been designed around movement, memory and seasonality. The menus will draw inspiration from Singapore and the wider Southeast Asian region, while allowing the chefs to work with ingredients that shift throughout the year. The result is a dining experience that aims to feel rooted in place, yet open to global influence.
Journe’s menus will unfold through rotating “chapters”, each telling a different story through flavour and presentation. Early dishes will spotlight familiar regional ingredients in new ways, from rojak-inspired salads with roselle molasses and fermented fruits to creations using lesser-known produce sourced from local wet markets. The approach places equal emphasis on technique, storytelling and craftsmanship, with each plate designed to carry a sense of narrative.

Drinks will also play a key role in the Journe experience. Lih, who is a certified sake sommelier, will develop sake and rice-based alcoholic pairings to complement the food. The beverage programme is set to add another layer to the experience, connecting the menu’s Southeast Asian influences with considered pairings.
The launch follows recent international recognition for Lih, whose truffle-inspired steamed egg dish secured second place in a global culinary competition earlier this year. With Journe, the couple are bringing that same attention to detail to a more intimate setting.
