Singapore’s omakase scene continues to evolve, and KOU at Ichigo Ichie is bringing a fresh point of view to the table. Located within the MICHELIN-recognised Ichigo Ichie at Claymore Connect, the limited-run pop-up introduces a Japanese-French dining experience rooted in seasonality, restraint and quiet confidence.
Rather than operating as a standalone restaurant, KOU takes over the Ichigo Ichie dining room on selected days. The pop-up runs on Sundays and Mondays for lunch and dinner, giving diners a more intimate way to experience the Orchard Road address. The concept is scheduled to continue until 31 July, allowing the menu and mood of the space to shift with the season.

At the helm is Chef Tan Kian Hong, who previously served as sous chef at Ichigo Ichie. His approach combines Japanese discipline with French fine dining technique, resulting in menus that feel precise without being overly decorative. The focus is placed firmly on ingredients, texture and progression, with each dish designed to lead naturally into the next.
KOU’s omakase menus are offered in two formats. Lunch features a seven-course Discovery Menu, while dinner presents a more extensive nine-course Signature Menu. Both are built around seasonal produce and a measured sense of pacing, creating a dining experience that feels considered from start to finish.
The menu showcases the pop-up’s Japanese-French identity through dishes such as mochi-style bread, chawanmushi and abalone. Guests can also add an A5 wagyu katsu sando, bringing a touch of indulgence to the meal. While the cooking is technical, the overall feeling is calm and uncluttered, allowing the flavours to take centre stage.

The philosophy behind KOU is shaped by wabi-sabi, the Japanese idea that beauty can be found in imperfection, simplicity and natural change. This gives the pop-up a reflective quality, moving away from visual excess in favour of balance and depth.
