BULL AND BEAR QUICKLY became one of the hottest new restaurants to launch in Dubai, a welcome addition to the city’s buzzing culinary scene. New for 2020, the New York-inspired venue has raised the bar further revealing a brandnew menu celebrating the culinary duo behind the concept – Chef Luigi Vespero and Chef Giovanni Paolo Pintore.

Guests can look forward to indulging in delicious food offset by the dramatic sweeping views of the Dubai city skyline in the heart of the financial district. When curating the new menu Chef Luigi and Chef Giovanni wanted to ensure local farmers and suppliers were at the heart of the concept. The Chefs source organic vegetables locally such as peppers, kale, aubergine and lettuce, in addition to oysters and chicken. Guests will be treated to classic dishes with an added touch of luxury to offer an elevated modern twist.

Upon starting the dining experience, diners will choose from a selection of 4 appetisers including the classic Bull and Bear Waldorf Salad with organic kale, apple, celeriac remoulade, pulled chicken and walnut dressing; chopped tuna and caviar with pickled cucumber, white radish and avocado mousse; and seared Scottish scallops with pumpkin puree, amaretto crumble, radicchio and raspberries crisp.

When discussing the new menu and the collaboration between the two chefs, Chef Luigi said; “Chef Giovanni and I have very similar cooking styles which is why we work together so well.

I have learned that we both share the same passion and respect for the ingredients and those who produce them. “Although we have worked in in different countries and kitchens, we have both worked under some of the most recognised chefs in the world, which has certainly given us inspiration for this new menu and made us who we are today,” he added.

Following the starters, the main courses offer a selection of seafood, meat and vegan dishes, including Vegan Eggplant Parmigiana, Beef Rossini and Lobster Linguini to name just a few. For those who would like to live a carnivore’s dream, guests can choose from one of the cuts of beef from the newly opened Meat Room. The dedicated room has selected cuts available based on the feeding process of corn, grain or grass.

For a sweet finale, diners can enjoy delicious desserts such as smoked tiramisu, black forest cherry with yoghurt ice cream and hazelnut chocolate fondant with dulce crispy pearls, toasted marshmallows, ice cream and bitter chocolate sauce. Prices start from AED30 for starters and appetisers, and AED95 for main courses. ✤
