Former Kiln Head Chef Karla Knowles is opening a neighbourhood restaurant on Charterhouse Street.
The capital’s appetite for Thai cooking has another address to add to the list. Opening on Tuesday 3 November 2026, PAM London will introduce a menu of Thai flavours, British seasonal ingredients and live-fire cooking to 61 Charterhouse Street in Farringdon. Behind the project is former Kiln Head Chef Karla Knowles, who has partnered with Edouard and Romain Bourrillon, the duo behind Maisons Vivantes.
At PAM, Knowles will draw on her travels and combine Thai culinary influences with European techniques. Seasonality will guide the kitchen, with dishes changing as different ingredients become available and new ideas take shape. Sharing is central to the format, giving diners the chance to explore several sides of the menu over the course of a meal.
The opening selection offers a good indication of the restaurant’s approach. Miang Kham will feature betel leaves wrapped around bite-sized fillings made with British produce. Knowles will also serve her interpretation of Khao Soi Noi, inspired by the Shan dish she discovered in Mae Sai. Elsewhere, Roast Duck with Frites and Curry Sauce places the relationship between Thai flavours and European influences firmly on the plate.
Live fire will play a key role in the cooking, while cocktails and a wine list will accompany the food. With 45 seats and a large leaning table for drinks and snacks, the space will accommodate both a full dinner and a shorter visit to sample something from the kitchen.

PAM plans to host quarterly art exhibitions alongside collaborations and events involving chefs, artists, winemakers, DJs and other creatives. These gatherings will give the restaurant a changing calendar of reasons to return, with food, music and visual art sharing the space.
Knowles has already introduced Londoners to the project through a series of collaborative dining events during summer 2026. These included collaborations with Dudu Eats, Dream Sake, Sera and Firangi, ahead of PAM London establishing its permanent home in Farringdon.
