Osteria Panzano opens in Knightsbridge on 26 November 2026.
The 100-cover Tuscan restaurant is Zuma co-founder Arjun Waney’s first Italian concept.
Features include a chef’s table, private dining room, terrace, and cheeses and charcuterie to eat in or take away.
The Tuscan restaurant opens on 27 November, with a seasonal menu, an open grill and a chef’s table.
Arjun Waney is turning his attention to Tuscany. The Zuma co-founder, whose hospitality portfolio also includes COYA, La Petite Maison and The Arts Club, will open Osteria Panzano in Knightsbridge on 27 November 2026. His first Italian restaurant will pair cooking over fire with the region’s produce, wines and generous approach to hospitality.
The project has a personal starting point. Waney owns property in Tuscany, where he produces olive oil and Sangiovese wine, and the restaurant draws on that relationship with the region. Waney describes it as his final legacy project, making the 100-cover opening a particularly personal addition to his portfolio.
Tuscan-born chef Paolo Parlanti will lead the kitchen. His career spans more than 25 years, with experience in Italy, France, Kazakhstan and Mexico, alongside London roles at Frescobaldi, Il Baretto and The Arts Club. At Osteria Panzano, his seasonal menu will put the grill and rotisserie to work across meat and seafood dishes.

Dishes will include cacio e pepe with black truffle, yellowfin tuna tartare with avocado and crispy shallots, and roast turbot served with braised herb potatoes. Whole fish and T-bone steaks will be cooked over open coals, while chicken and quail will turn on the rotisserie.
The fire will also shape the room. An open grill and rotisserie will sit at the centre of the restaurant, with a chef’s table offering a close view of the cooking. Elsewhere, a private dining room beneath a brick-vaulted ceiling will cater to group gatherings, while a terrace will provide outdoor seating.
Guests will be able to order Tuscan salumi and regional cheeses to eat in or take away. The wine list will follow an Italian lead, giving particular attention to Tuscan and Super Tuscan bottles, alongside a selection of Champagne.
Arjun Waney OBE, founder of Osteria Panzano, said: “Food is a journey, and for me that journey has taken me from Japan to Peru, to France and back to London. Osteria Panzano is my opportunity to celebrate the food, wine and spirit of Tuscany. I wanted to create a place where people could come together, dine well, enjoy great wine and experience the incredible simplicity and quality of authentic Tuscan ingredients and homegrown produce from the region. It’s about bringing that genuine Tuscan experience to London: warm, generous and full of life. I think the restaurant is going to be fantastico!”
