Set to debut in the Red Sea City, Aiku will introduce a new way to experience Japanese dining, with an intimate counter and carefully crafted handrolls.


The Kingdom’s dining scene continues to evolve at a pace, and Jeddah is about to welcome a concept that feels both timely and distinctive. Aiku is set to open as the first dedicated handroll bar in Saudi Arabia, bringing a focused and intimate take on Japanese cuisine to the Red Sea city.

For those unfamiliar with the format, a handroll is a cone-shaped piece of sushi made with crisp nori, warm rice, and fillings ranging from fresh seafood to vegetables and sauces. Unlike cut sushi rolls, handrolls are designed to be eaten immediately after they are made, while the contrast between the crunchy seaweed, soft rice, and fresh filling is still at its best. The experience is as much about timing and texture as it is about flavour.

That sense of immediacy will sit at the heart of Aiku’s concept. The venue is built around the idea that handrolls deserve their own stage, served one by one in a setting that lets guests appreciate the craftsmanship of each piece. The counter-style format also makes the meal feel more personal, encouraging conversation between diners and chefs while creating a social, front-row dining experience.

The team behind Aiku is putting quality and detail at the forefront, as per a post on the brand’s official Instagram account: “We believe handrolls deserve their own counter, served exactly as they were meant to be eaten. That is why we created Aiku. At Aiku, each handroll is prepared one by one and served immediately. Seafood is selected daily. Nori is kept crisp. Rice is served warm. Every element is treated with care and intention.”

In a market where diners are increasingly looking for specialist concepts rather than broad menus, Aiku arrives with a clear point of view. Led by Faisal Alfadl, the project aims to add something new to Saudi Arabia’s culinary landscape. While handroll bars have gained popularity across the region – with the likes of Kokoro, Tezukuri and Ubi proving popular in Dubai – the format remains a fresh addition to the Kingdom.

As anticipation builds ahead of the opening of the first handroll bar in Saudi Arabia, Aiku looks set to become one of Jeddah’s most talked-about new restaurant launches.
