Wood-fired ovens are often associated with being the incubator behind preparing pizza, but the Italian dish isn’t the main star at Behind Clay. 


The wood-fired oven has been the “it” appliance of kitchens in recent years, but how often has it been mentioned at the centre of Asian fusion cuisine? From Naples via Shanghai, Behind Clay does exactly that with this collaboration between Chef Ciro Sorrentino of the famed pizzeria Margherí, and Chef Yip, whose modern interpretations of Chinese cuisine over two decades has seen him design menus across Asia. 

Located in the gastronomic enclave of River Valley Road, this dining lounge is concealed behind its sister restaurant IL CLAY — a buzzy Neapolitan pizzeria — where sleek mirror interiors with plush seats for 52 guests and provocative pin-up visuals come drenched in red with mood lighting.

Composed as sharing plates to while the evening away, Behind Clay’s menu opens with a course of wood-fired signatures aptly titled “Order Everything,” which spotlights its culinary concept. With dishes such as a whole Fried Quail dish finished with a Chinese wine flambé, and calamari tossed with hae bee hiam; a spiced blend made with dried shrimp, diners may find the main topic of conversation here to revolve exactly around the novel cuisine. 

But for the purist who insists that a kitchen equipped with a wood-fired oven must serve up pizza, there are two options: an Asian-leaning pie topped with pumpkin puree and butternut chicken curry, or a fusion take that combines duck foie gras pate with tamarind sauce.

And for evenings that simply need a dose of oysters and tipples to close the day, Behind Clay is currently offering six oysters at just $1 each — subject to availability — all night with any menu item ordered. Those who clock in for drinks early will also enjoy signature cocktails, house wines, prosecco, and mocktails at lower rates.
