Singapore has been a playground for some of the world’s most exciting dining concepts. From hawker stalls to fine dining institutions, it’s got it all. And this time, it’s marking the return of celebrated chef André Chiang with a brand-new concept called 1887 by André.

Now open, 1887 by André is located within the main building of Raffles Hotel Singapore. As its name suggests, 1887 by André pays homage to the year the hotel was founded. Helmed by Chef André Chiang, the restaurant marks his long-awaited return to Singapore’s dining landscape.

Step inside and you’ll feel like you’re in a tropical glasshouse with lots of history. The space features green drapes, vintage fans, hand-painted palm murals, and a grand chandelier. The interiors blend colonial-era influences with contemporary design, making it an elegant yet modern space.

1887 by André is built around the idea of “reimagined heritage gastronomy”. The menu draws from the archives of Raffles Hotel and Singapore’s cultural tapestry, but interpreted through a modern French culinary lens.

With around 60 dishes that span history, culture, and your own culinary journey, you’re in for a treat. Highlights include a Turtle Soup inspired by an 1887 recipe, Blanquette de Bak Kut Teh, and Royale of Foie Gras, which is a signature dish that dates back to André Chiang’s earlier career. A curated beverage program mixes old and new, with grapes, cocktails, and a selection of alcohol-free drinks. 

But beyond the food, the opening has a significant story behind it. Chef André Chiang closed his award-winning Restaurant André in 2018 at the height of its success, choosing to return to Taiwan. Now, with 1887 by André Chiang, he returns to Singapore to contribute to the city that helped shape him.
