• Maison Yoshoku houses three distinct dining concepts in a single restaurant.

  • Yoshoku is an intentional culinary concept that subverts traditional Japanese cuisine with Western ingredients and techniques.

  • Maison Yoshoku is located at Raffles City Shopping Centre.

Maison Yoshoku introduces Singapore to yoshoku, a style of Japanese cuisine with Western influences that dates back to the Meiji era.

Yoshoku cuisine was born out of the shifting attitudes that defined the Meiji Restoration in Japan. After centuries of seclusion during the Edo period, the Japanese Emperor declared that progress for the Land of the Rising Sun was only possible if Japan embraced Western ideas. Along with Western infrastructure and industrialisation came Western food and the culinary techniques used to prepare it. Maison Yoshoku, the new Japanese fusion restaurant at Raffles City Shopping Centre, puts this modern Japanese culinary concept in the spotlight.

Founded by the Surrey Hills Group, Maison Yoshoku offers dining experiences in several forms. Lunches here are presented in Hitsumabushi-style format, where dishes such as Farm Seabass Meunière and Black Garlic Wagyu are accompanied by rice, pickles, and dashi, allowing guests to personalise how they would prefer to taste the dishes.

For dinner, Maison Yoshoku repositions itself as an izakaya restaurant serving a selection of signature bar bites best paired with its house pours and cocktails. These include the Scallop Karokke; a croquette seasoned with yuzu and sandwiched with a comté cheese fondue, and the Crispy Teba Gyoza filled with a stuffed boneless chicken wing.

Maison Yoshoku’s most interesting proposition is likely its dessert omakase, where made-to-order plated sweets arrive suspended above the bar via the restaurant’s customised magnetic tableware. Similar to the original concept of omakase, desserts here are created based on the seasonality of key ingredients and take on Maison Yoshoku’s overarching East meets West identity. Served in three, five, or seven courses, the dessert omakase offers a more intriguing end to meals here beyond ordering something off the menu.

Like most fusion culinary concepts, yoshoku celebrates balance rather than contrast from ingredients unfamiliar to two or more distinctly different cultures, and somewhere in that process, something uniquely brilliant is forged. At Maison Yoshoku, the cuisine born of Japan’s necessity for change has found its newest advocate.
