Born from chef Titus Thamil’s love for Japanese ingredients, his new Mediterranean restaurant Noor Singapore features refreshing offerings inspired by the two cultures.


Combining two disparate cuisines as one can feel like a boxing match for the taste buds when executed poorly. That jostling for attention on the palate has no place in chef Titus Thamil’s culinary rulebook at his new outfit, Noor Singapore — a Mediterranean restaurant at its heart, imbued with the spirit of Japanese influences. 

Located at Mohamed Sultan Road, Noor Singapore seats 65 guests in its main dining room, with an additional space for 10 at a hidden izakaya located at the back. When describing the mix of cultures present in his menu, Thamil says, “My foundation is Mediterranean. Japanese ingredients and fermentation came in gradually, and they have stayed because they work with what I’m cooking. The menu is really a reflection of what I find delicious. Food that is warm, generous, a bit punchy; dishes you want to keep eating.”

This innovative approach tinkering with flavour is what gave rise to dishes such as the Mediterranean Ramen, featuring a chicken broth interestingly flavoured with tahini and harissa, and Tahini Gyoza, a Japanese dumpling dish stuffed with chicken shawarma, served with aromatic pine nuts and the Middle Eastern ground sesame condiment. Sweet endings at Noor Singapore similarly feature flourishes from both cuisines in its Labneh Cheesecake; the familiar dessert updated with a Greek-style strained yogurt base, and Sticky Goma; a black sesame financier topped with white chocolate and rounded off with Lebanese olive oil.

So named after the Arabic word for “light,” the 30-year-old chef-owner aims to enlighten with his style of cooking, in a relaxed, unhurried setting that encourages diners to decompress. Leaving Noor Singapore, Thamil wants those patronising the restaurant to take away the message that his offerings here are “…meant to make you feel warm, comfortable and looked after — the kind of meal that leaves you glowing a little.”
