Rolls Handroll Izakaya brings an omakase-inspired approach to handrolls at its intimate city-centre restaurant.


Japanese cuisine is a study of excellence in minimalism, where seasonal ingredients at their peak are treated with deep respect and unadulterated by their natural flavours. Rolls Handroll Izakaya, the new chef-counter restaurant at Mercer ICON Singapore City Centre, brings that same product-first philosophy to its menu focusing on prime ocean catch.

The 16-seat dining room comes rendered in textured wood and brushed steel, and warm lighting sets the tone for an intimate gastronomic journey at Telok Ayer Road. Helmed by chef duo Max and Raymond — formerly of the fine Japanese restaurant Hiryu — their latest menu is afforded the standard of refinement expected of omakase kitchens. 

This attention to detail naturally extends especially to its signature handrolls. First surfacing in records dating to the Edo period of ancient Japan in the 1600s, handrolls were created as a meal of convenience for the working class, as they are meant to be consumed handheld while on the go. Ironically, today, as dictated by formal Japanese etiquette, handrolls are generally favoured to be consumed while seated instead of walking. 

Signature Handroll

Guests here can have a taste of this dish with the restaurant’s recommended six-piece handroll set. This entails cuts of favourites such as salmon and tuna, alongside buttery amberjack and flounder. Each bite is assembled within eyesight by the chefs, as guests standing over the counter are given full views on their careful preparation. 

For a lighter midday meal, an accessible lunch set spotlighting the bare freshness of six varieties of sashimi for $28 is also available for consideration. Diners with an appetite for more can additionally opt for familiar Japanese favourites, the likes of okonomiyaki, carpaccio, and chirashi don, during lunch and dinner service.
