Two of the city’s hottest restaurants are teaming up for a culinary collaboration

A night at Italian hotspot Torno Subito is always a good idea, but a meal with Chef Massimo Bottura’s comrades? Even better. Enter: Massimo’s Friends, a new and exclusive tasting menu experience that returns on 30 May. Taking place at W Dubai – The Palm, the second edition will feature an eight-course menu curated by two culinary experts: Chef Bernardo Paladini (Torno Subito’s Chef de Cuisine and handpicked protégé of Massimo Bottura) and Chef Himanshu Saini (the creative talent behind the MENA’s 50 Best awarded Trèsind Studio).

The pop-up will see the two masterminds step behind the stove and prepare an authentic feast of signature dishes. For AED 499 per person, diners will be treated to a selection of brand new dishes from Saini and Paladini, plus twists on old favourites.

This dining experience starts with a Welcome From The Kitchen, featuring open Kathi Piadina and Kebab Cannoli, followed by Rasam of Overcooked Pasta (a Ganji saaru prepared from the starch of overcooked pasta with lentil doughnut and curry leaf pesto) and then Pappa Al Pomodoro in Mumbai. 

The culinary journey continues with Xiao Long Raviolo (a soupy dumpling of wild mushroom served with mushroom chai and tartufo papadum), Pizza Hawaii (sourdough focaccia, smoked mozzarella, pineapple chutney, goose bacon, fennel and crispy tomatoes), Milano-Hyderabadi, risotto (a cross between Milanese and biryani) and Fra Diavolo (charred lobster tail glazed with pickled pomodoro chutney and served with corn curry). 

Trèsind Studio

For the sweetest of endings, Coffee Cornetto (a filter coffee rosette served with aerated chocolate ganache and miso caramel ice cream) or Samosa Baba (Baba’ cake, pineapple and green chilli cremoso, samosa essence, masala chai and ice cream), will surely hit just the spot.

Making his way up through the competitive Italian food landscape, Chef Bernardo completed a three-year stint in Acquolina, a one Michelin starred restaurant in Rome. After which he arrived at Osteria Francescana. Working under acclaimed chef Massimo Bottura was the ultimate goal, and Bernardo has had the opportunity to work at Franceschetta58 (known as the little sister of Osteria Francescana) and help out during the opening of Gucci Osteria in Florence. The journey has now brought him to lead Massimo Bottura’s Torno Subito.

Trèsind Studio is renowned for providing diners with an immersive and intimate journey into Modernist Indian cuisine. Chef Himanshu Saini and his team of dynamic young chef’s craft elevated seasonal tasting menus with creative dishes inspired by Frank Sinatra and even lockdown banana bread. Chef Himanshu’s distinctive style is a mélange of global ingredients and modern cooking techniques with traditional Indian elements. The evolution of Trèsind is his ode to the culinary legacy of his homeland.
