Why foodies should flock to W Dubai – The Palm

While we’d like to believe that the end of summer is nearly in sight, the days of barbeques and beachfront dining are not quite upon us, leaving us indoors and in need of a little culinary action. A shake-up over at Torno Subito has us talking, as the playful Italian eatery at W Dubai – The Palm has just welcomed a new Chef de Cuisine. Chef Alessio Pirozzi has joined the team, replacing Bernardo Paladini, who has relocated to Miami to lead an exciting new project: Torno Subito’s second venue. 

Pirozzi brings with him a wealth of experience, having worked at some of Italy’s greatest fine-dining establishments. Born and raised in Italy, he always dreamt of becoming a chef, thanks to his early childhood memories of watching his grandmother cook while he sat next to the stove, sampling her handiwork. After leaving Italy and serving stints in Germany, Spain and the UK, the chef gained experience at the likes of hotel chains (such as the Dorchester Hotel in Park Lane London with Alain Ducasse) and free-standing restaurants (It Ibiza with Gennaro Esposito) before eventually moving to China.

Elsewhere at W Dubai – The Palm, there are two new dining experiences in the works at Akira Back. ‘Uncorked’, an eclectic six-course pairing menu, will be hosted by Chef de Cuisine Giovanni Ledon and in-house sommelier Irina Baeva. Taking place every second Thursday of the month, starting on 11 August, it’s designed to showcase the very best of culinary creativity at this contemporary Asian restaurant. Diners will be treated to a welcome drink and six delectable dishes – Japanese cuisine with a Korean essence – accompanied by six perfectly paired glasses of grape.

Set in the exclusive private dining room of Akira Back, ‘Uncorked’ will be kickstarted with Avocado and Caviar (served with Thai basil, habanero, Oscietra caviar, and nori rice crackers) followed by panko-fried Dibba Bay Oyster and King Crab and Sweet Corn. Foodies will then be treated to a palate-cleansing Yuzu Sorbet and a selection of showstopping mains – Lamb Chops (served with a red wine reduction) and succulent Wagyu Short Rib (accompanied with salsa Negra, yuzu mojo, yucca and burnt leeks) included. Naturally, you’ll end the night on a sweet note, courtesy of a delicious Strawberry and Cream dish with mochi veil. ‘Uncorked’ is priced at AED 699 per person.

Akira Back

Meanwhile, the new ‘ABnormal’ monthly dining series is all about deviating from the usual, with each experience dedicated to different episodes. Taking place on the last Thursday of each month, ‘ABnormal’ will kick off on 25 August with ‘Omakase’. As its name suggests, diners will take a seat at Akira Back’s sushi counter and leave it up to the chef. As for what will follow? A culinary adventure of three delicious starters, a 12-piece sushi set, miso soup and dessert – with premium sake pairing to boot. ‘ABnormal’ is priced at AED 899 per person
