So what makes this pizza so exceptional? Its pizza dough. Prepare to be amazed as this dough is not your run-of-the-mill variety — it’s a masterpiece in itself. Crafted with love and care, the dough is fermented for 72 hours, making it light, crispy and oh-so-digestible. But what sets it apart is the secret ingredient — a 50-year-old sourdough that’s been handed down through generations like a cherished family heirloom. Every slice of Antonia’s pizza contains a piece of history and a whole lot of flavour.
Antonia’s unique sourdough has a story of its own, starting in 1972 when Grandma Antonia created this magical starter. Passed down through the family, the sourdough has matured like fine wine, gaining complexity and taste with each passing year.
Simone Federici is a culinary prodigy who discovered his passion for cooking at the tender age of 13. Under the tutelage of his grandmother, Antonia, he honed his skills and was later recognised as one of Italy’s top three best young chefs. After gaining valuable experience in some of Italy’s finest restaurants and making his mark in the Caribbean and Miami, he decided to bring his culinary magic to Abu Dhabi.
Antonia’s first branch at Soul Beach – Mamsha Al Saadiyat has already won hearts and palates alike, and now, the second branch in the Al Zeina district is set to double the delight in September.
