The French chef Yannick Alléno has made a name for himself around the world with his MICHELIN-starred restaurants. He has opened restaurants in London, Monaco and Paris. He will soon open L’Abysse Dubai at One&Only The Palm in Dubai.

Chef Yannick hails from Puteaux, France. He began his career working for chefs Roland Durand and Martial Henguèhard, then studied under chef Louis Grondard. In 2008, he founded Le 1947 at Cheval Blanc Courchevel. In 2014, he took over the kitchen of Pavillon Ledoyen in Paris. The two restaurants went on to receive three MICHELIN Stars – the highest honour in the guide.

Designed by Laurence Bonnel, known for sculptural minimalism and emotionally led spaces, in collaboration with architectural duo RoWin’atelier, L’Abysse Dubai feels quietly otherworldly. Sculptural textures, travertine surfaces, and bespoke art installations by William Coggin and Célia Bertrand draw inspiration from the rhythm of the sea. The result is an atmosphere that is both meditative and refined, echoing the cuisine it serves.

At its heart, L’Abysse honours the Japanese cuisine of time, using ageing and temperature as tools to draw out the purest expression of seasonal fish and ingredients. That philosophy is matched with the creative, modern sensibility of Yannick Alléno. Guests embark on an omakase journey that balances precision and poetry, with each course unfolding like an intimate dialogue between sushi master and guest.

With just ten seats at the counter, 16 in the dining room and eight in a private dining room, L’Abysse Dubai ranks among the region’s most exclusive culinary experiences. Every plate and gesture is designed to awaken the senses and calm the mind, a rare meeting point where French expression aligns with Japanese purity.

L’Abysse previously opened in Monte Carlo, Paris and Osaka, and it is now making its debut in Dubai. The concept will combine French and Japanese influences. The tagline states: “Embark on an innovative gastronomic journey crafted by Chef Yannick Alléno.”

The full menu for L’Abysse has not yet been unveiled, but if the Paris concept is any indication, guests can expect excellence. The food menu is described as a tribute to precision, with sushi pieces presented like works of art. Dishes have included Cuttlefish Tagliatelle, Fire Grilled Langoustine, and Scallops enlivened with meadowsweet. Guests can also enjoy wine and sake pairings, with options from sought-after sake producers.

Yannick is no stranger to Dubai. He previously opened STAY by Yannick Alléno at One&Only The Palm. The restaurant showcases fine French cuisine and has been awarded two MICHELIN Stars in the MICHELIN Guide Dubai. Next year, he will also bring his acclaimed concept, Pavyllon, to Mandarin Oriental Downtown, Dubai.

Yannick said, “We have several signature creations, because there are three restaurants. All of them are carefully created. 101 is a fantastic restaurant next to the beach, where you can sample delicious seafood. At STAY, we try to create a gastronomic cuisine with dishes such as langoustine cannelloni, artichoke tart with truffles, and wagyu beef with mushrooms.”

Conceived as a space between depth and light, L’Abysse Dubai at One&Only The Palm embodies quiet sophistication, a meeting of French precision and Japanese purity.
