The critically acclaimed chef brings seasonal finesse and French technique to a new Dubai address.
Yannick Alléno is setting his sights on Downtown Dubai. The multi-decorated French chef, who now counts 17 Michelin stars across his global portfolio, has revealed that Pavyllon Dubai will open at the soon-to-open Mandarin Oriental Downtown, Dubai. The news surfaced in an interview with SPHERE Magazine, where he confirmed the expansion of his modern French brand to the Middle East this autumn.
Born in the suburbs of Paris, Alléno trained with acclaimed maestros Gabriel Biscay, Roland Durand and Louis Grondard before building a restaurant empire that stretches from the Middle East to Paris, via St Tropez and London. Today, his philosophy for Pavyllon is clear: an elegant, all-day concept that balances French craft with local, seasonal ingredients and counter seating in the heart of the dining room.

If Pavyllon’s MICHELIN-starred locations in London, Monte-Carlo, and Paris are any indication, Pavyllon Dubai will likely serve breakfast, lunch, afternoon tea and dinner. Diners can look forward to a menu that blends classical technique with regional expression across dishes such as Charcoal Grilled Blue Lobster, Modern Beef Fillet Stroganoff and Roasted Crown of Pigeon and Legs Confit. During a visit to the London location, we were enamoured by the now-famous Steamed Cheddar Soufflé, offering a light-as-air savoury soufflé veiled with a vibrant watercress coulis and alluring bacon butter. Cocktails and Champagne by the glass are very much part of the ritual, setting a celebratory tone from the first pour.
Design is central to the brand’s charm. Across Europe, Pavyllon’s rooms have been shaped by Parisian designer Chahan Minassian, who favours a warm, quietly luxurious palette and tactile materials. The interiors are warm and inviting, evoking the feeling of a chic Parisian residence through the use of lacquered panelling, mohair velvets, woven silk textiles, and hand-blown Murano chandeliers.

What can Dubai diners expect? Alléno’s commitment to seasonality and locality suggests a menu that will draw from the best regional produce while keeping the brand’s signature precision intact. As the chef himself frames it, Pavyllon is “for all-day use” and built around great ingredients, a welcoming counter, and a confident wine list.
