Inspired by classic dishes and aromatic flavours, LAO has recently expanded its culinary offering to include beloved favourites from Southeast Asia.
A nominee for Dubai’s ‘Best Pan Asian Restaurant’ at the forthcoming FACT Dining Awards Dubai 2021, LAO welcomes its new chef de cuisine, Bayu Fidiyanto, who hails from Surabaya on the Indonesian island of Java.
Adding to the flavour-packed menu that takes diners on a culinary journey from the city streets of Bangkok to the coastal waters of Vietnam’s Halong Bay. Chef Bayu presents authentic Indonesian dishes rooted in tradition from the 17,000 culturally diverse islands that make up his home country.
Throughout November, diners can indulge in the limited-time Indonesian Expedition, a special four-course menu featuring traditional Indonesian dishes. The culinary journey begins with Gado-Gado (steamed vegetables salad with peanut dressing sauce), followed by Soto Ayam (spicy turmeric chicken soup) and Beef Rendang (slow-cooked beef in spices and coconut milk). The meal culminates with Mango Pudding (mango, coconut milk, black sesame seeds).
Embark on a sensory epicurean adventure that utilises authentic spices and sauces in dishes inspired by the family recipes and traditional cooking techniques of the LAO culinary team. Chef Bayu first became interested in cooking while helping his mother prepare meals for the family, before studying hospitality and tourism and quickly rising through the culinary ranks of working in a cold kitchen, butchery, main kitchen and then international kitchens.
LAO offers diners a memorable dining experience across the charming interiors and alfresco terrace overlooking the hotel’s central gardens. There is also a private dining room available for intimate dinners.
The addition of Indonesian favourites at LAO enhances the eatery’s concept making the dining journey through Southeast Asia even more memorable. The Indonesian Expedition is available until 30 November, from 6:30pm to 10:30pm daily. AED 299 per person (four-course menu with a welcome cocktail).
