The acclaimed chef returns to the UAE for a one-off dinner at Kinara by Vikas Khanna.
Acclaimed chef, filmmaker and humanitarian, Vikas Khanna returns to Dubai this week to host an exclusive dining experience at his restaurant at JA Lake View at JA The Resort. As one of the first Indian chefs to be awarded a Michelin Star in the U.S and the author of 37 cookery books, Vikas Khanna is a pioneer of modern Indian cuisine.
On Friday 11 June, diners can ‘Dine with Chef Vikas Khanna’ as he steps into the kitchen to prepare an authentic Indian tasting menu featuring six courses bursting with flavour. Inspired by the beauty of home cooking from the diverse regions of India and South Asia, Vikas Khanna’s tasting menu will take diners on a culinary adventure through authentic regional dishes that have been reimagined with a modern twist.
Chef Vikas Khanna’s tasting menu will highlight classic dishes, focusing on Indian spices and the subtle smoky flavours of the Tandoori oven. The meal begins with a Pao Bhaji amuse bouche, consisting of bread pockets, vegetable mash and tomato dust, followed by four delectable chutneys – Kashmiri apple and raisin relish, Konkani pineapple and fennel seed pickle, green chilli and peppers, and pickled shallots and beetroot.
The culinary journey continues with sharing style dishes served, including Tandoori Lemon Prawns, served with avocado mint sauce, creamy Saag Paneer featuring cottage cheese, leafy greens parmesan papad and Murgh Ghee Roast of spicy braised chicken, yoghurt mustard seeds and curry leaves.
Main courses are set to include tandoori lamb chops served with sweet potato mash and a fennel salad and the fragrant Navaratna, comprising roasted baby vegetables, tomato gravy and torched onion.
A dish of Soya Sago will end the evening on a sweet note, featuring tapioca, soya milk, compressed melons, and chia seed crisps.
The decor at Kinara by Vikas Khanna features large spice displays and a spice market experience to provides guests with the opportunity to learn about the culinary functions and health benefits of each ingredient used.
Dine with Chef Vikas Khanna takes place on Friday 11 June at Kinara by Vikas Khanna in the JA Lake View at JA The Resort, from 6:30pm to 11:00pm. AED 450 per person.
