The Italian dining destination replaces Resonance by Heston Blumenthal at the luxury resort.


Few restaurants in the world have been name-checked by rappers. Yet Italian American hotspot Carbone has made its way into Drake’s Spin Bout U, where he rhymes, “You know how it goes when they can’t get a reservation up in Carbone”. This is likely how you’re going to feel when Carbone Dubai opens on 6 October at Atlantis The Royal.

The celebrity favourite restaurants will take over the space formerly occupied by Resonance by Heston Blumenthal on the ground floor of the beachfront hotel. Inside Carbone Dubai, the mood channels the golden age of glamour. The dining room is adorned with chandeliers, a curated art collection, velvety, jewel-toned nooks, leather banquettes, and damask-covered walls with Venetian glass mirrors. A sleek, elongated bar anchors the room, while theatrical tableside moments and charismatic service bring the experience to life.

Carbone Dubai

At the heart of the restaurant is one of the largest jellyfish tanks in the world, spanning an entire wall. Guests can opt to dine al fresco on the terrace, enhanced by sweeping views of the Skyblaze Fountain Show. For private occasions, a semi-private dining room seats up to 40 guests.

The menu is distinctly Italian American, inspired by the grand dining rooms of 1950s New York, and elevated by top-tier ingredients. Signature plates that helped define the brand will be featured in Dubai, including Caesar alla ZZ, Linguini Vongole, Chicken Scarpariello, Veal Parmesan, and the fan favourite Spicy Rigatoni. Wine lovers can explore a list of over 450 labels, featuring rare vintages, boutique producers, and exclusive Dubai firsts.

Carbone Dubai

The launch marks the group’s tenth Carbone worldwide, following launches in Dallas, Doha, Hong Kong, Las Vegas, London, Miami and Riyadh. The first Carbone opened in Greenwich Village in New York. Founded by Mario Carbone, Rich Torrisi, and Jeff Zalaznick, the restaurant is celebrated for its luxurious, jazzy dining experience, with chandeliers and royal blue walls with hints of gold, offering a quintessential New York City dining experience.

Over the years, Carbone has attracted a star-studded clientele, including Adele, Barack Obama, Jennifer Lopez, Kanye West, the Kardashians, and Travis Scott. Given its upcoming location at Atlantis The Royal, the Dubai outpost of Carbone is poised to become a hotspot for A-list diners as well.

Carbone Dubai will be open daily from 6pm to 11:30pm.
