Chef Reif Othman has added another homegrown concept to his growing Dubai dining portfolio. The award-winning chef behind REIF Japanese Kushiyaki, TERO and Hoe Lee Kow has launched CRISP, a new bakery inspired by the flavours, craft and rituals of Nordic baking.

Available via Deliveroo, CRISP brings a Copenhagen-inspired bakery experience to Dubai, with a menu centred on handcrafted breads, pastries, doughnuts, cookies, and viennoiseries. The concept can also be enjoyed at the FACT award-winning REIF Japanese Kushiyaki in Dubai Hills, giving fans of Chef Reif’s cooking another reason to visit the popular neighbourhood restaurant.

The idea for CRISP dates back to 2024, when Chef Reif Othman took part in a five-week pop-up at Tivoli Gardens in Copenhagen. During his time in the Danish capital, he became immersed in the city’s bakery culture, where precision, technique and quality ingredients play a central role. That experience helped shape CRISP, a concept that brings Scandinavian baking traditions together with Reif’s signature approach to flavour.

While the bakery takes inspiration from Nordic techniques, the menu carries the multicultural influences that have become central to Reif Othman’s cooking. Scandinavian, Japanese and Southeast Asian flavours appear across the collection, resulting in a bakery menu that feels familiar, playful and distinctly Dubai.

Highlights include Shio Pan, the Japanese salt bread known for its buttery texture, alongside Pain au Chocolat, Vanilla Brûlée Millefeuille, Matcha Strawberry Roll and Spiced Apple Brioche. Those with a sweet tooth can also try the Pandan Kaya Jam Doughnut, White Chocolate Matcha Cookies with Lotus, Double Chocolate Cacao Nibs Cookies and Genmaicha Crème Castella.

For those who want to take the flavours home, CRISP also offers jars of its signature spreads, including Singaporean Pandan Kaya Jam and Coconut Kaya Jam. The Shokupan Loaf is another standout, bringing soft Japanese milk bread into the mix.
