There is Medu Vada paired with gorgonzola dolce, tender coconut kimchi and Parmesan saaru, plus Ghee Roast Crab sharpened with burnt cinnamon and curry leaf crisp. Elsewhere, Scallop is layered with Guntur chilli sambal and rojak bhel, Turbot comes with charred broccolini and curry leaf vinaigrette, and Tortellini is filled out with goat cheese raita and slow-cooked lamb curry.
