The intimate omakase restaurant will welcome diners from 19 October 2026, following openings in Paris, Monte Carlo and Osaka.
The French chef Yannick Alléno has made a name for himself around the world with his MICHELIN-starred restaurants. He has opened restaurants in London, Monaco and Paris. He will soon open L’Abysse Dubai at One&Only The Palm in Dubai on 19 October 2026.
Following L’Abysse in Paris, Monte Carlo and Osaka, the Dubai opening combines Japanese craftsmanship with French culinary techniques. At its heart is Alléno’s Cuisine of Time, a philosophy that explores how maturation, extraction and careful preparation influence the flavour and texture of each ingredient.
Leading the experience is sushi master Ken Ishihata, who will guide diners through an omakase menu spanning 13 sequences and five movements. Guests surrender the ordering to the chef, with the meal progressing from delicate opening bites to savoury compositions known as Emotions, followed by nigiri, a moment of transition and Amamis, the final sweet movement.

The first menu details offer plenty to get excited about. Creations include sea urchin with ginger mayonnaise, lightly grilled langoustine, and an azuki and combawa millefeuille. Temperature, texture and timing inform how each dish is served, while curated pairings encompass wine, sake, tea and crafted infusions.
For those who enjoy watching the kitchen at work, the ten-seat counter places guests directly in front of the sushi master as each course is prepared and presented. An additional 16 seats fill the dining room, while an eight-seat private dining room caters to those seeking a more secluded setting.
The interiors come courtesy of Laurence Bonnel and architectural duo RoWin’atelier. Tactile materials, sculptural forms and carefully controlled lighting establish a calm backdrop to the meal. Works by William Coggin, Célia Bertrand, Silver Sentimenti and Rino Claessens add artistic interest throughout the space, complementing the movement and detail of the counter experience.

Yannick Alléno said: “L’Abysse was born from my love for Japan and Japanese gastronomy. It began in Paris, then travelled to Monaco and Osaka. Dubai was the natural choice for its next chapter, and One&Only The Palm has once again given us incredible creative freedom. Around this counter, we want to take our guests on a journey, surprise them, and offer them a magical experience. Together, our teams have created something Dubai has never seen before. The result is beyond anything I imagined, and I am incredibly proud.”
The chef already has a longstanding relationship with One&Only The Palm through STAY by Yannick Alléno, the resort’s two-MICHELIN-starred French restaurant.
First established at Pavillon Ledoyen in Paris in 2018, L’Abysse now enters its fourth destination with the Dubai opening. Reservations are available, and the restaurant will close on Tuesdays. The dress code is casually elegant, with full-length trousers required for men.
