Conrad Singapore Marina Bay welcomes a month-long residency that brings REIF Japanese Kushiyaki to the Lion City.

With his restaurants, he has carved his own name in the emirate’s buzzing dining scene, and this September, he returns to where his journey began, as REIF Japanese Kushiyaki settles into Conrad Singapore Marina Bay for a month-long residency from 1 to 30 September. For the chef, it is more than a pop-up. It is a personal chapter written in the city that shaped his craft.

Two outdoor venues will set the stage. The Terrace hosts the REIF Japanese Kushiyaki pop-up, a relaxed setting built around live fire and the kind of plates that invite sharing. Expect charcoal-kissed kushiyaki skewers, featuring tender chicken and beef, as well as seasonal vegetables, alongside signature dishes like the Wagyu Katsu Sando. Desserts nod to Dubai favourites while folding in Singaporean character, creating a finish that feels both familiar and new.

Oscar’s Restaurant takes the flame further with the Kushiyaki Grill Takeover by Chef Reif. From Wednesday to Saturday, the chef and his team will command the outdoor live grill as part of the Sea, Smoke, Spice buffet. Angus beef arrives from the coals with a perfect char, skewers leave the grill in a steady rhythm, and seafood takes on a depth that only embers can deliver. The focus is on clarity of flavour and generous portions that keep the pace lively.

The residency also tells a story. Chef Reif Othman began in Singapore, then built his reputation in Dubai with a portfolio that prizes honesty on the plate and energy in the room. As he explains, “It’s my home and where my food journey started, from helping my mother in her stall to becoming the chef I am today,” he shared. That sentiment runs through the menu, which balances technique with memory and celebrates the connection between both cities.
