Abu Dhabi’s bar scene found a new rhythm with the arrival of Saikindō. Inspired by Japan’s listening-bar culture, the intimate Four Seasons venue pairs a serious analogue sound system and vinyl collection with cocktails and contemporary Japanese food. Beverage Director Marco Corallo oversees the drinks programme, while Head Chef Slamet Wahyudi draws on more than two decades of Japanese culinary experience. Twelve music-inspired cocktails have been created using AI to map the rhythm and tone, determining what a song would taste like. Upside Down, inspired by Diana Ross, brings together Nikka From The Barrel whisky, St-Germain, toasted coconut and pineapple, while Big Poppa gives hip-hop a savoury edge with sotol, Campari, wasabi, tomato dashi and vanilla. Mamsha Al Saadiyat gained one of its most interesting new restaurants with blue.
